Fermentationfermentation takes place in stainless steel vats for 10-12 days at controlled temperature of 28-30°C (82-86F).
AgingAfterwards, the wines undergo malolactic fermentation and then they are aged in Veglie for 4 months and later brought to Vignamaggio where, after further wood aging, they are bottled.
